Recipe: Peanut Butter Chicken

My mom has been making this for like forever and it's soo good!

-chicken breast
-1 can chicken broth
-soy sauce
-1 tbs cornstarch
-1 cup peanut butter

1. Chop, grate, pulverize- whatever- your ginger and garlic. Put the resulting mush in a skillet with some oil and stir fry. Then put it in a large saucepan, set aside.

Why yes, I DO love ginger, why do you ask?

2. Cut up the chicken breast into cubes, stir fry in a little oil in a skillet.
Oh and somewhere along the way you should start cooking the rice!

3. Mix the broth, soy sauce, and peanut butter in with the garlic/ginger.
Before you put the cornstarch in, first dissolve it in a little dish with 2 tbs water.
If you don't, you'll spend forever trying to break up powdery little clumps. Ew.

Oh and my mom makes it with red pepper. I hate pepper. But feel free to add it. I won't be eating it.

4. Cook the sauce on low heat until it's thick and bubbly.
Put the chicken in and serve over rice!
